Sweet potato trout salad

If you’re getting bored of the same old same old then why not try this..

Cut a sweet potato into rounds, brush with olive oil and season with your fave herbs or spices (Zatar , Paprika, Cayenne, Oregano all work well here). Spread on baking tray and cook in oven (180 fan) for 20-25mins.

Meanwhile grab any veggies you can find in the fridge. Blanch greens in a wok or pan. Griddle peppers, courgette, fennel etc add any spices , maybe a bit of harissa, garlic, lemon juice to the veggies.

Finally add to your plate and top with some smoked trout, salmon, mackerel or some poached eggs or baked tofu .. sprinkle some fresh mint or parsley, a drizzle of olive oil and

enjoy!

A quick and easy way to use up what’s in the fridge but that tastes amazing, gets those veggies in and keeps you going throughout the day!
