Ingredients
200g Chickpeas, drained and rinsed
Handful of fresh salad leaves and pea shoots
1/4 of Red onion, thinly sliced
1/4 Red or Yellow pepper, de-seeded and sliced
¼ block of feta, crumbled
½ Lemon juiced
1 tbsp Rapeseed oil or Extra virgin olive oil
1/2 tsp Paprika, more if desired
Sea Salt and Fresh ground black pepper
Instructions
Drain and rinse the chickpeas, place in a bowl and sprinkle with the Paprika, half the oil, salt and pepper.
Thinly slice your red onion and add this to the chickpeas. Using the juice of your lemon squeeze this into the chickpea and onion and mix gently.
On a plate stack your salad leaves, pepper and feta, add a little bit of pepper to taste and the remaining oil.
Top with your chickpea and onion mix and serve.
