Gluten free power pancakes

Ingredients

  • 1 large ripe banana, peeled

  • 2 Free range eggs , Plus 1 egg white

  • 1 heaped teaspoon maca powder

  • 1 tbsp milled flaxseed or linseed

  • 1 tbsp milled chia seeds (if you don't have just make it 2 tbsp of flax or linseed)

  • ¼ tsp cinnamon

  • 2 tsp coconut oil

  •  Fresh berries, maple syrup and Coconut yoghurt for topping

Instructions

  1. Put banana, eggs, cinnamon, maca powder,  flax and chia seeds into blender and whiz until fully combined into your batter.

  2. In a frying pan add your  coconut oil until hot, then drop in your blitzed batter to make small pancakes, you should be able to get 2 -3 in your fry pan at one time.

  3. When your cooking the batter watch for tiny bubbles to form, once they do then flip them over and continue to cook until heated through.

  4. You will get between 3 – 4 pancakes out of the batter.

  5. Top with fresh berries, maple syrup and a dollop of coconut or other yoghurt, you will want to have these everyday they are so good!
